Unlike classic New York-style cheesecake, a Basque cheesecake is intentionally baked at a high temperature so the top gets deeply caramelized and "burnt," while the inside stays incredibly creamy and custardy. It has no crust, and the texture is light yet rich — almost like a cross between a flan and a cheesecake. Originating from the Basque region of Spain, it's rustic, dramatic, and absolutely delicious.
